Что стоит знать о крахмале и содержащих его продуктах
Перед тем как начать писать эту статью, я обратился за помощью к интернету, но каково было мое удивление, когда я читал ссылку за ссылкой о полезных свойствах крахмала для человеческого организма. Но так ли это? Я попробую Вам объяснить!
Крахмал известен всем следящим за своей фигурой. Во многих случаях именно он является причиной набора веса, даря человеку избыточное количество калорий. Но кроме этого, этот продукт является очень клейким, связующим если его смешать с жидкостью. Наверняка многие из Вас пользовались крахмалом, когда нужно было подклеить обои или для загустения соусов при приготовлении различных блюд. Представьте себе, что происходит в кишечнике когда в него попадает крахмал: смешиваясь с желудочным соком и другими продуктами, которые вы поглотили, он разжижается и заполняет полости кишечных ворсинок. Из-за своих клейких качеств, крахмалистая жижа и немалая часть пищи, что смешалось в ней, остается на стенках кишечника. И так происходит каждый раз при поедании продуктов с высоким содержанием крахмала.
А дальше только хуже!
Крахмал – это один из видов полисахаридов, которые при переизбытке образуют слизь. Именно по этой причине высококрахмалсодержащие продукты называют слизиобразующими.
Так как эта слизь заполняет стенки кишечника, она мешает правильной работе кишечных ворсинок и стабильной перистальтике кишечных стенок, что вызывает запоры, а самое важное – она еще затрудняет всасыванию через стенки кишечника необходимых для вашего организма витаминов, минералов и многих других важных элементов.
Я не брал за основу данной статьей запугать любителей картошки и хлеба, ведь она несет исключительно информационный характер, который идет в разрез со многими статьями опубликованными на просторах интернета, и каждый склонен выбирать сам, что есть правда. Но предупредить я обязан: при таком положении дел в кишечнике, о котором описано выше, организму ничего не остается, как потреблять то, что ему предлагается. Через кишечник в кровь впитывается слизь, которая по кровотоку распространяется по всему организму. Вследствие чего в венах образуются белые тельца, фильтр нашего с вами тела – печень – начинает засоряться, работа организма дестабилизируется и т. д. и т. п.

Когда мы варим рис, пшено или заливаем кипятком кашу «Геркулес», клейкими эти ингредиенты становятся только после термической обработки горячей водой. Почему так происходит: молекулы крахмала находятся в белковой оболочке, которая распадается при высоких температурах, даже если вы будете обжаривать зерна и перемалывать их в муку, как только смешаете с водой, мука увеличится в размере превращаясь в липкое тесто. Говорит ли это о том, что сырые продукты с высоким содержанием крахмала будут более полезны? На мой взгляд так и есть, ведь 36° C нашего тела не достаточно для разрушения молекул белка, а кислоты которые находятся в нашем ЖКТ успевают гидролизовать (расщепить, разложить) молекулы крахмала, и как описывает наука, при таком распаде образуется глюкоза. Так что делайте салаты с сырой картошкой, если не можете совсем от нее отказаться и замачивайте крупы в теплой воде, а не варите их доводя до кипения.
