- репчатый лук – ½ луковицы
- морковь – 100г
- жменя грецких орехов
- оливковое масло – 1 ст. л.

- Чистим тыкву от семян и нарезаем кубиками. Лук нарежьте небольшими кубиками, а морковь тонкими полукольцами.
- В кастрюлю, в которой будет вариться суп, разогреваем одну столовую ложку масла и добавляем лук доводя его до золотистого цвета. После чего добавьте морковь и тыкву. Пассируйте овощи в течении 2 мин. на небольшом огне.
- Когда овощи начнут румяниться, залейте их теплой водой не выше уровня овощей. Добавьте щепотку черного перца. Один из важных нюансов в приготовлении супа – вода не должна закипеть, ее температура не должна превышать 50°C. Иначе все полезные свойства овощей улетучатся. Понять, что температура подходит к данному рубежу можно по пузырькам, которые поднимаются со дна кастрюли.
- Как только Вы увидите пузырьки, закройте кастрюлю крышкой, выключите огонь и оставьте на 5 мин.
- В это время слегка обжарьте на сковороде грецкие орехи, чтобы они раскрыли свой вкус и аромат.
- После того, как тыква стала мягкой (проткните ее деревянной зубочисткой), вылейте все содержимое кастрюли в блендер, добавьте обжаренные орехи и хорошенечко взбейте до кремообразного вида.
- Разлив суп по тарелкам, украсьте его листиками тимьяна или петрушки.
